Nutmeg absolute is a softer and sweeter extract when compared to the essential oil. This lovely quality from Biolandes is very reminiscent of freshly grated nutmeg used in desserts and drinks such as eggnog and classic rice pudding.

Nutmeg absolute is the perfect material to bridge the gap between spice materials and wood chemicals. Small amounts are all that are needed for a gentle heart to base note spice that blends particularly well with fruit, wood and other spice materials.

Kiwi Rice Pudding Recipe

While this Nutmeg Absolute must not be used in cooking, here is a fun and easy recipe for Rice Pudding, a classic New Zealand pudding from the national treasure known as the Edmonds Cookbook:

5 Tbsp short grain rice
2 Tbsp white sugar
3 cups Full-cream milk (alt: half and half)
2–3 drops of vanilla extract
1 Tbsp butter
¼ tsp nutmeg grated

Combine first four ingredients in an oven dish and rest for thirty minutes. Dot with butter and grate nutmeg over the top. Bake for two or three hours at 150c (300f), stirring occasionally during the first hour.
